I've replaced the Swiss chard with a wild Warrigal spinach, otherwise known as New Zealand spinach. I altered the recipe to replace all purpose flour with white spelt flour. Also increased the Parmesan to 40 g. Are used 01 tablespoon cookie scoop levelled and the dough was cooked for three minutes. This gave a fluffy but firm texture.
