Potato Gnocchi with Fine Herb Béchamel

Share a little about the ingredients and techniques used to create this dish/item. The ultimate potatoes with gravy! I was trying to create a lighter, fine dining take on potatoes and gravy.( Not to say potatoes and gravy aren't wonderful because they are!) The gnocchi greatly reduces the amount of potato plated but still keeps that satisfying comfort experience. The spinach adds texture without overwhelming the dish and the fine herb béchamel pulls it all together. Just a bit of crispy salt pork on top to finish the flavor. Very tasty! What advice would you give someone starting this project? I would suggest small portions, This is a very rich, complex dish! The bowl pictured has a 3 1/2" diameter. Another idea would be to plate this combination on 1/2 plate then lean protein against stack giving it an asymmetrical effect.
