Starting with an Italian mirepoix, then adding the rest of the ingredients for a long slow simmer, the simple ingredients transformed into a delicious sauce. During the 4 hour simmer, I made homemade pappardelle from Giuliano Hazan's other class, Homemade Italian Pasta. Finishing with Parmigiano-Reggiano, I had a fantastic from-scratch meal, which was so much fun to make!
