Custom Live Dough "W" Wreath

Please describe the type of cuisine. Artisan Bread Share a little about the ingredients and techniques used to create this dish/item. I used King Arthur White Whole Wheat flour in place of the white rye flour and increased the water by 40g, as Chef Hitz suggested. My KitchenAid complains by the end of the second mix of the second batch, but dough is very easy to shape (and smells great).

Thanks for the kind words. I think Chef Hitz deserves most of the credit for designing and demonstrating this project so well. I was just following directions!
