Cold-brew coffee starts with whole bean coffee. As with any coffee, you want to start with high quality, freshly roasted beans. Freshly roasted beans will appear plump and shiny while old beans will appear dry and dull. The fresh beans have more flavor and will yield a better cup of coffee — whether you are planning to brew it hot or iced. Here, I’m using a dark roast coffee, but you can use any type of coffee that you like. 

Whole Bean Coffee

The beans should be ground just before you make your brew. You could have them ground at the store or coffee shop where you bought them, or you could grind them yourself. After grinding, you simply need to combine the coffee with water and wait.

Freshly Ground Coffee Beans

The cold brewing process is slow and takes from 12 to 24 hours. I usually brew my coffee for 12-14 hours. If your coffee is very coarsely ground or you simply prefer a more intense coffee, you should opt for a longer brew time. Though the brew time is long, the cold-brewed coffee is smooth and rich, with virtually none of the acidity that you find in hot-brewed coffee. 

This recipe produces a concentrated coffee that needs to be diluted with water before it is served. Not only does a coffee concentrate mean that you’ll be able to make more servings with one batch of cold brew, but it means that you’ll be able to completely customize the coffee to suit your preferences. You could use a small amount and treat it like espresso to make an iced latte, or simply dilute it with water until it reaches that perfect consistency (less water if you like it strong) before serving. 

How to make cold-brew coffee

Makes about 2 cups

Ingredients:

  • 6 oz whole coffee beans
  • 32 oz water

Step 1:

Coarsely grind the coffee beans in a coffee grinder. Place grounds in a large pitcher. Pour water over the top of the beans and stir to combine. Refrigerate for 12-24 hours.

Preparing Cold Brew Coffee

Step 2:

Using a coffee filter or cheese cloth, strain the grounds out of the chilled coffee. The mixture may need to be strained twice to remove any fine grounds.

Step 3:

Use 1 part coffee concentrate and 1 to 2 parts water (depending on how strong you like your coffee) and combine over ice for smooth, satisfying cold-brew coffee. Sweeten to taste, if needed.

Or just make it in a french press and press the grounds down. Quicker and fewer dirty dishes. Make some coffee and freeze it in ice cube trays and then put in freezer bags. That way your iced coffee isn’t diluted as your coffee melts.

After I make my coffee, I pour a little boiling water over raw sugar to melt it and then add that and soy milk to my coffee. After it sits a full day those flavors marry together and the coffee is ready to ice and drink. Best iced coffee ever.

We already use cold-brewed coffee, in our coffee shop in the Heart of England, to make our iced coffees. I bake many of the cakes we sell, including Marble cake – which I see in your ad for the Coffee Shop Bakes course. My husband has been in the coffee business for many years, with coffee shops at exhibitions, and now also retails in Eccleshall, Staffordshire. He give talks on coffee and tea to local groups.
