Chocolate Peppermint Christmas Cake

Share a little about the materials, processes, and techniques used to create this cake I used my favorite gluten-free chocolate cake recipe, the chocolate diplomat cream, and regular swiss meringue buttercream flavored with peppermint extract. I also used vegan butter (Earth Balance) and coconut cream in place of the butter and cream, with good results. I intended to put the raspberries in with the filling, but was so focused on getting the layers on correctly that I forgot, so I used the raspberries as embellishment. I have only made a few cakes, so I am still working on getting the icing on smoothly.
