Q&A with Amanda Rettke

dooley8850 asked:
Very pretty. Which pan did you use? Either 6" or 8"? How do you keep your lines so straight?
Amanda Rettke answered:
Hi! I used a six inch pan for this cake. It is three layers. I use a bench scraper to create guidelines in the crumb coat.. that helps keep me straight! :)
dooley8850 asked:
Why is everybody making a 6" or 8" cakes to show? Do you make your own icing? I need a recipe that is not too sweet but is very good. One that can be used on any cake. Any suggestions?
Amanda Rettke answered:
I can only speak for myself, but I prefer 6in or 8in cakes! :) You can always modify a recipe to use less sugar if that is your prefference.
dooley8850 asked:
I watched your new Simple Piping, Stunning Results and loved it. I do use the Buttercream a lot. I do not use fondant. Would love to learn how to make items with modeling chocolate. I also have your book Surprise-Inside Cakes. You are very talented.
Amanda Rettke answered:
Thank you so very much!! That is very kind of you. :)
