Chef Jeremy is wonderful...I love this slow method of fermenting dough. The time is well worth it, flavor is unlike anything you would expect from a home oven. I even brought a baguette across the street to my French neighbors........Merci Jeremey :) ( my EARS could be deeper...ce la vie)
