This is an example of the proofing cabinet I've MacGiver'ed in my house. You can see there's a heating pad on the bottom. On top of that I put one or two glasses/cups of water that I've microwaved so it creates steam. There's a cooling rack above the heating pad and then I place the proofing bread on top of that. I don't want to proofing bread to be in direct contact with the heating pad. I've duct-taped a trash bag to the shelf above, so it's easy to unfurl and keep the heat and humidity inside the proofing cabinet. When not in use, the plastic bag is rolled up and secured.
