Made this for a luncheon at work. Our annual conference is Scaling New Heights and that is our logo on the joconde sponge. It wasn't perfect... too many air bubbles and the caramel pastry cream gooshed out when I cut it, even though I froze it first. But the joconde sponge and the puff pastry were perfectly delicious. The pastry cream was yummy, too.. just messy. I reduced the amount of milk in the pastry cream and added banana liqueur and rum instead to make it more like a bananas foster. The alcohol cooked out so nobody got woozy at the office and HR was not unhappy. I took banana chips and dipped them in caramel to make the petals for a "flower" on top.
